Amaranthus dubius also known as Red Spinach, is rich in nitrates1. These nitrates are converted (reduced) to nitrites with the help of microorganisms (facultative anaerobes) present on our tongue. This nitrite is converted (reduced) to nitric oxide in the stomach under high acidic conditions and also in the presence of vitamin C (ascorbic acid - reducing agent)2. Human clinical studies on amaranth extract indicate its ability to increase the nitrate / nitrite content in the body and enhance the exercise performance1,3,4.

What is the secret behind nitric oxide?
Nitric oxide (NO) is a very important compound necessary for proper functioning of the body and is synthesized in body using arginine-NO synthase pathway. It is known as vasodilator as it relaxes the muscle and enables proper blood flow. It also helps in regulating blood pressure, enhances exercise tolerance and improves cardio-vascular health5.

How beneficial is nitrate to us?
